Rustic loaves from a stone oven were what Bröd & Salt built its bakery around when it began in 2011, at the height of the Swedish sourdough wave. Pizza and buns came later, and the shop at Hammarby allé 66A is one of 26 the chain runs in Stockholm, alongside one in Uppsala and one in Gothenburg. Baking happens at the main bakery in Västberga, which also houses the production kitchen where the chain’s cooks prepare the food for its salad bars. Deliveries reach the shops each morning in the company’s own vans, driven by its own staff. Breakfast and lunch are served in the shops as well as coffee and cake, and the cakes are sold through grocery retailers too. No per-shop hours are published, so opening times go in once Bröd & Salt prints them. Delivery runs on Foodora.
